The grapes are harvested by hand and fermented spontaneously in open vats – without pumping, cooling, or heating. Periodically, the juice from the bottom of the vat is poured by hand over the pomace cap to keep it moist. The extraction is therefore very gentle and slow.
After pressing, the wine rests for around 24 months in large old wooden barrels before being bottled without filtration.
