Grown in the cool, elevated reaches of Woori Yallock, the 2022 ‘Dans les Bois’ Pinot Noir is a striking example of site transparency and vintage character. From one of the lowest-yielding seasons in over a decade, this wine showcases the intensity and finesse possible in the Upper Yarra when nature delivers in small quantities.

Hand-picked on March 9, the MV6 fruit was partially destemmed with 40% whole cluster retained for structure and aromatic lift. Wild fermentation took place in small open vessels, with three weeks of skin contact to gently extract colour and tannin. The wine was pressed to French oak barriques (20% new) and aged on lees for 10 months before bottling. Just 170 dozen produced.

Aromas of wild forest flowers, cherry skin, and mineral earth set the tone. The palate is bright and fresh, showing red cherry, wild strawberry and cranberry, with subtle complexities from whole bunch fermentation. Fine tannins and a whisper of volcanic-earth salinity complete the elegant frame. A precise, aromatic Pinot with undeniable Upper Yarra identity.
