Lake’s Folly Chardonnay 2023
100% Chardonnay, grown on a single-site estate vineyard, in Pokolbin, Lower Hunter Valley. The Chardonnay vines are grown on the flat southern edge of the estate, on white loamy clay at an elevation of 50-100 metres. The fruit is hand-picked early in the morning, and chilled before crushing & de-stemming. It is pressed and completes fermentation in new, one year-old, and two year-old small, French oak 225L barrels. The wine is lees stirred every week for 6 months, before bottling which gives the textural element that is quite unique to Lake Folly’s Chardonnay. In order to preserve the acidity of the wine, it does not go through malolactic fermentation.
