Hand-picked chardonnay is chilled overnight and then whole bunch. Pressed without sulphur, then wild fermented in a mix of old and new French oak barrels. After partial malolactic fermentation, Chardonnay is then matured on lees for 10 months and stirred occasionally. This creates a wine which is vibrant, complex and textured with the ability to age gracefully for many years or equally be enjoyed now.
