Dessert wine made from Aligoté off vines with an average age of 20 years picked during sunny late-autumn weather. Entire grapes pressed in a pneumatic press before fermentation with indigenous yeasts at temperature controlled between 5° and 8°C. Fermentation lasts for 15 to 20 weeks, and is followed by maturation in barrels for nine months. No malolactic fermentation. Lightly filtered before bottling. – Domaine Matrot
